Black Bean & Corn Beef Enchiladas

  • 8 Corn Tortillas
  • 2 cups Roasted Beef, cooked & shredded
  • ½ cup Cheddar Cheese, shredded
  • 1 cup Sierra Madre Grocery Company Black Bean & Corn Bruschetta Salsa
  • 1 cup Black Bean & Corn Bruschetta Salsa
  • ½ cup Cheddar & Jack Cheese Blend, shredded
  • Sour Cream to Garnish

Directions:

Preheat oven to 350F.  Pre treat a baking dish with release cooking spray

In a medium mixing bowl, combine shredded beef, 1 cup shredded cheese and ½ cup Sierra Madre Grocery Company Black Bean & Corn Bruschetta Salsa.  Mix until thoroughly incorporated.

Microwave corn tortillas on High for about 1 minute

Place ½ cup chicken mixture into each tortilla.  Roll and place seam side down in baking dish

Evenly spread 1 ½ cups Black Bean & Corn Bruschetta Salsa over enchiladas.  Evenly sprinkle cheese over salsa

Bake for 20 to 25 minutes.  Serve Hot.  Garnish with Sour Cream

Yield: 4 servings (2 enchiladas each serving)
